Attacking C=O with sodium bisulfite


This is useful because the bisulfite addition compound is usually a crystalline solid, so it can be used as a purification technique - reacted, separated by filtration, then easily hydrolyzed back with a weak acid or base:


The functional group is called a bisulfite adduct.

Another useful property of these is their solubility in water, this is why many medical drugs have carbonyls converted into bisulfite adducts.
